Vézelay ‘Champs Cervin’ AOC

Tasting note: This east facing parcel is located on a hillside in the commune of Tharoiseau, opposite Vézelay.  The 25 year old vines are worked organically. Fermentations takes place in barrel (20% new) with very little addition of sulphur. The barrels are blended in stainless steel tanks one and a half month before bottling. The wine is fresh, with citrus aromas, orange blossom and chalky minerality The palate is linear and fresh but with good volume in the mid-palate. Food pairing: Perfectly with fromage frais, pork filet mignon or poultry in cream sauce.
