Bourgogne ‘Les Blanches’ AOC

Tasting Note: Only 450 bottles were produced in 2018 from this tiny vineyard located above Pommard. The vines are 75 years old and farmed organically. All soil treatments (ploughing, weeding)are carried out by a horse. The name of the vineyard, “Les Blanches,” refers to the high proportion of limestone in the soil giving it a white appearance. This parcel produces very small yields (15Hl/Ha, much smaller than most Grand Crus that usually produce 35hl/Ha). These ancient vines produce very small berries with thick skins, but sadly little juice! The winemaking is very ‘small scale’ with pumping over being carried out with a bucket! The wine was raised in an older barrel and minimal sulphur used. 30% whole bunches were kept for the fermentation. The nose is very expressive with notes of fresh cherry and white pepper. This wine should be opened at least one hour before tasting. The complex and structured palate punches way above its humble appellation. . Food Pairing: It goes well with duck confit, roast goose or veal.
